For a quick and easy treat while on any phase of the South Beach Diet, desserts such as the Black Cherry Parfait have only 50 calories and two and half grams of fat. Prepare a package of sugar-free black cherry flavored gelatin according to the directions on the package. Pour the mixture into a nine inch pan and refrigerate for a few hours, or until completely firm. Cut the gelatin into half inch cubes and place the cubes in four dessert glasses with alternating layers of fat-free whipped topping and enjoy.

Lemon Ice

Lemon Ice is another one of the South Beach Diet desserts that are actually suitable for all three phases. This simple recipe is made with a package of sugar-free lemon gelatin, a cup of chilled lemon-lime seltzer, a half teaspoon of grated lemon peel, and three tablespoons of fresh lemon juice.

Boil one cup of water, add to the gelatin and stir until completely dissolved, usually two minutes or so. Add the seltzer, lemon peel, and the lemon juice then pour the contents into a nine inch square pan. Cover the pan and freeze for three hours, or until completely frozen. Let stand for about 10 minutes at room temperature before beating with an electric mixer, or in a blender, until smooth.

Spoon the mixture into dessert glasses and store the remainder in the freezer and enjoy a dessert with absolutely no fat and an amazing 10 calories.

South Beach Diet Desserts for Phase Two

Strawberry Parfaits

Suitable for both phases two and three, Strawberry Parfaits are made with one package of sugar-free strawberry gelatin, a half cup of sliced strawberries, a few ice cubes, and a little more than a cup of lite whipped topping.

To make six servings, divide the strawberries into six small dessert glasses and then prepare the gelatin according to the package directions. Add the ice cubes and stir until melted. Pour 3/4 of the gelatin into the strawberry filled glasses and refrigerate for approximately 20 minutes or until the gelatin is not quite completely firm. Blend the whipped topping with the remaining gelatin with a wire whisk before spooning over the gelatin and strawberries. Refrigerate for one hour and garnish with the rest of the whipped topping.

With only 50 calories and two grams of fat, this is one of the easiest and most popular South Beach Diet desserts of all.

South Beach Diet Desserts for Phase Three

White Chocolate Mousse

This delicious dessert serves six and can be had during both phases two and three of the South Beach Diet, containing only 70 calories per serving and just a half a gram of fat.

Mix two cups of cold fat-free milk with a package of white chocolate, fat-free instant pudding and pie filling in a medium sized bowl, beating with a wire whisk for two minutes, or until blended. Add a half cup fat-free whipped topping and a cup of fresh raspberries and stir gently until well mixed. Refrigerate for one hour, serve and enjoy a tasty White Chocolate Mousse.
